Hearty Barley Beef Stew

Ingredients:

  • 1 tablespoon olive oil
  • 2 pounds boneless beef chuck roast, cut into 1″ cubes
  •  kosher salt
  •  freshly ground black pepper
  •  8 ounces sliced baby bella mushrooms
  •  16 oz baby carrots, each cut in 2-3 pieces
  •  1 ½ tsp minced garlic
  •  4 medium-large yellow potatoes, peeled and cut into 1″ cubes
  •  1 large yellow onion, chopped
  •  6 cups beef broth
  •  1 cup dry red wine
  •  1/4 cup tomato paste
  •  1 tablespoon Dijon mustard
  •  1 teaspoon dried thyme
  •  3/4 cup pearl barley
  •  1 bay leaf

Additionally:

  •  Crusty bread for serving

You’ll also need:

  • Cutting board
  • Sharp knife
  • Paper towels
  • Skillet
  • Slow cooker (7 qt or larger)
  • Slow cooker liner

Directions:

  • Cube the beef, patting dry with paper towels, and generously season with salt and pepper.
  • Pour a drizzle of oil in a skillet, adding the seasoned beef cubes in small batches. Sear on each side and remove each batch to a plate as you go. A quick sear on the beef helps lock in the juices and flavor, so don’t skip this step!  
  • Here’s where it gets super easy: line your slow cooker with a liner, and add the prepared beef to the slow cooker and all other ingredients (except for the crusty bread), stirring well to combine.
  • Cook on high heat for 4 hours, then reduce heat to low and let it go for another 2 hours. Serve with crusty bread for dipping. Yum!
