Camping Recipe: Easy Skillet Beef Tacos

  • 6 6-inch corn tortillas
  • 1 1/2 lb. ground beef
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. kosher salt
  • Black pepper, to taste
  • 1 tbsp. vegetable oil
  • 2 small sweet potatoes
  • 1 14.5-ounce can of black beans,
  • 1 chipotle chile in adobo
  • 1 teaspoon adobo sauce
  • 2 c. salsa
  • 1 avocado
  • Scallions
  • Queso fresco crumble

Instructions:

  1. Wash and dry potatoes. Then, peel them and cut them into 1-inch pieces.
  2. Drain and rinse the black beans and chop one of the chipotle chilies.
  3. Peel and chop the avocado and thinly slice some scallions for topping later.
  4. Over your fire, lightly Charlie tortillas over the open flame and then tear them into large pieces.
  5. Next, you will want to heat a cast iron skillet over medium-high. When the skillet is hot and ready, add the ground beef and season with chili powder, cumin, salt, and pepper to taste.
  6. While the meat is cooking, break it up so it crumbles, and the seasoning is incorporated throughout. Once the meat is browned and cooked through, remove it from the pan and set aside.
  7. Next, add a drizzle of vegetable oil and these sweet potatoes. Allow the sweet potatoes to cook without stirring for a few minutes before moving them around to ensure they brown evenly on all sides. That should take about 5 to 7 minutes. You want the sweet potatoes to be chard and crispy but soft on the inside.
  8. Once the potatoes are done, add in the black beans, chipotle, adobo sauce, and 1/4 cup of your choice of salsa, then stir in the beef in a cup of water and cook until the sauce has thickened. Should be another 5 to 7 minutes.
  9. Lastly, throw in the remaining 1 3/4 cups of salsa and water if it seems dry.
  10. Stir in the tortilla pieces and serve over rice with your choice of toppings.
